From the opening of our very first location in Uptown in 2013, to our growing family of restaurants and cafés around Denver, we’ve made it our mission to serve only intentionally-sourced, chef-inspired, scratch-prepared creations that are both nourishing and delicious.

Our Roots
We’re so glad you’re here! To understand the heart of Olive & Finch, you have to know our Founder, Mary Nguyen’s story.
Back in 2012, right here in our Denver community, she looked around and saw a real gap: you could have "chef-made" and healthy if you had all night and a big budget, or you could have "fast," which usually meant processed and uninspiring. After a personal health journey showed her how much real food changes the way we feel, she knew she had to bridge that gap. Wellness, she realized, shouldn't be a luxury, it’s a necessity.
Mary’s vision was also shaped by the Sunday dinners of her childhood, the only sacred window her hardworking parents had to truly slow down and connect. She wanted to bring that "Sunday Table" feeling– the warmth, the care, and the slow-roasted goodness– to everyday. Starting with our very first location in Uptown in 2013, she created a place where you can get scratch-made, chef-driven quality without the fine-dining fuss.
But O&F Collective is about more than just what’s on your plate; it’s about the people behind it. As a proud Denver native, Mary built a "Safe Spot" for our team– a culture fueled by great coffee and genuine kindness rather than the high-stress norms of the industry. We believe everyone deserves to feel nourished, safe, and seen.
